A rib knit alternates columns of knit and purl stitches, so the fabric folds accordion-style and stretches far more across the body than a plain jersey of the same weight — then recovers instead of bagging. That's why cuffs, collars and waistbands have always been ribbed, and why it makes such good underwear: the structure does the holding, so less elastane is needed to keep the shape.
